Reception: The Starting Point of Quality ⏱️
It all begins the moment the trailers loaded with freshly harvested pistachios arrive at our facilities. This first step is a race against the clock. The pistachio, freshly separated from the tree, contains a fleshy outer skin (the epicarp) and high moisture, around 40-45%. This combination makes it very vulnerable to the proliferation of fungi and the appearance of stains on the shell if it is not processed quickly.
For this reason, we establish a golden rule: every pistachio must be processed in less than 24 hours after harvesting. Upon arrival, each batch is weighed and a representative sample is taken. This sample allows us to perform a first quality control, evaluating the percentage of impurities (leaves, branches), the degree of ripeness, and the initial moisture. This initial analysis is vital for planning and adjusting the parameters of the subsequent phases of the process.
The first action is a dry pre-cleaning. We use winnowers and vibrating tables that, through air currents and movement, efficiently separate leaves, small branches, and other plant debris that accompany the nut from the field. 1. Separation of Split and Closed:
The first major classification is based on whether the shell has split naturally on the tree. Split pistachios are the most valued for the snack market. For this task, we use separating machines that, by means of cylinders with needles or vibration systems, catch the closed pistachios and separate them from the split ones. 2. Size Grading:
