The critical importance of fast and efficient drying

Right after harvesting, the freshly picked pistachio has a moisture level that can range between 30% and 45%. This high moisture is the perfect breeding ground for the proliferation of fungi and other microorganisms, especially of the genus Aspergillus, which produces very dangerous toxins called aflatoxins. These substances are not only a serious risk to consumer health, but also mean the automatic rejection of entire batches by buyers and processors, with the catastrophic economic consequences that this implies.

The main objective of drying is to reduce this moisture to a safe level, which is around 5% or 6%. This process must be carried out in the shortest possible time, ideally within the first 24 hours after harvest, to completely inhibit the development of any pathogen and preserve the organoleptic qualities of the nut intact. A well-dried pistachio is a quality pistachio, with a long shelf life, which maintains its intense green color, its characteristic flavor, and an unmistakable crunchy texture.

In addition, correct drying is essential to facilitate the natural splitting of the shell. The sudden change in temperature and the rapid evaporation of internal water generate tension that favors the pistachio opening, a quality feature highly valued in the market.   1. Hulling or Peeling: The pistachio, on the tree, is covered by a fleshy outer skin called the epicarp (the hull). This layer must be removed as soon as possible, as it is where microorganisms first proliferate. This operation is carried out with hulling machines that, using rollers and pressurized water, detach this skin without damaging the hard shell that protects the cotyledon.

  2. Washing and flotation separation: After hulling, the pistachios are washed to remove dirt, leaves, and the detached skin itself. This step is used to make a first quality selection. Their operation is based on a simple but effective principle: a mass of pistachios is introduced into a silo or tank with a perforated bottom (a kind of false floor) and a current of hot air is passed through them from the bottom to the top.

Despite their drawbacks, static dryers are a perfectly valid and profitable solution for farms of up to 40-50 hectares, provided they are managed correctly to ensure the maximum possible homogeneity in drying.

Continuous or mixed-flow dryers

Continuous dryers represent a qualitative and quantitative leap in the drying process. They are designed to process large volumes of pistachios uninterruptedly, making them the ideal choice for large producers, cooperatives, or processing centers.

For farms of more than 80-100 hectares, the investment in a continuous dryer is fully justified, since the improvement in efficiency, product quality, and savings in long-term operating costs more than compensate for the initial outlay. The step-by-step drying process: control and monitoring

Once our dryer is chosen and installed, the work is not over. Correct management of the process is as important as the machine itself. The drying process is usually divided into two phases:

  1. First phase (Pre-drying): In this initial stage, air at a higher temperature (around 70-80°C) is used to cause rapid evaporation of surface water and the residual hull. The goal is to lower the moisture from the initial 40-45% to 12-15% as quickly as possible to stop any microbiological risk in its tracks. This phase can last between 3 and 5 hours.

  2. Second phase (Finish drying): Once the critical phase is over, the air temperature is reduced (around 60-65°C) to perform a slower and gentler drying. This allows the moisture inside the cotyledon to migrate to the surface and evaporate without damaging the product. A final drying that is too aggressive can “seal” the surface of the pistachio, leaving moisture trapped inside, or cause unwanted roasting. This phase is longer and requires more precise control until the target final moisture of 5-6% is reached.

Moisture control is the key parameter. Today there are very precise portable moisture meters that allow us to take samples at different points and times in the process to know when we have reached the optimal point. The operator’s experience is essential to interpret the data and adjust the dryer parameters (temperature, air flow, residence time) based on the characteristics of the input product (variety, size, initial moisture).
